I would like to achieve this effect in my OS X app. I can't find instructions or a tutorial for this. I suspect my problem is that I don't know what terminology to use in my search.
I have an NSToolBar. I can add a single button, but I don't know how to group multiple buttons and made them dependent on each other's toggle state.
Can you point me in the right direction?
That's a Segmented Control. (NSSegmentedControl)
Just drag it from the object library into the toolbar, and then you can configure every cell individually.

I have an NSToolbar with NSToolbarItem instances. One of the toolbar buttons is in one of two modes, depending on whether it currently operating (has been clicked) or not. I am handling this in code by changing the icon for the button to have a background rectangle when the command it represents is operational, but I can't help thinking there must be another way.
I've tried using the Selectable checkbox in XCode Interface Builder attribute inspector, and it sort of gives the result I want, except when it is selected I can't click any of the other toolbar items. I also can't see how to deselect it.
I'm a bit of a Cocoa noob so I expect the two state toggle thing is just waiting for me to find it, except so far I haven't been able to.
This seems like it would be a common thing to want to do, thing is how?
Several places in OS X (in this example, the Users & Groups pane in System Preferences) have circular image views that allow the user to either drag in an image, like in an editable NSImageView but also allow them to click to show a popover that allows various other choices of image sources.
I have checked the ImageKit framework, but the only thing I found similar is the image taking sheet.
How can I make use of this feature in my own Cocoa applications? I'd imagine it is implemented in some standard frameworkâbut any pointers on implementing something like this would be quite appreciated.
You will have to go down the custom control root as this is not available as a stand alone control.
However you have all the prerequisites.
The circular image view
There a several ways to implement this. You could try using a standard Cocoa button and customise as needed. Although it might just be easier to build from scratch by subclassing NSView. This was you can avoid all the NSCell stuff. I would do the latter.
The popover
Roll your own master-details type view controller to be displayed as the popover's content. In the left have a NSTableView (the master), the right have a NSCollectionView (the details). Below the collection view add some buttons.
I'm working on some updates to my first Mac app and I'm trying to get my window's toolbar buttons to look like the toolbar buttons on EVERY standard Mac app. However, for the life of me, I can't find a button type or a barbutton type that gets me what I'm looking for. Am I missing something?
Here is an image showing several Mac apps (Preview, Finder, and Safari) with toolbars at the top which have very-slighty rounded corner buttons which also have a slight gradient on them, etc.
However, in my .xib I've got a toolbar and I've dropped every kind of button I can find on the thing and nothing looks like the standard Mac button.
The first button looks pretty close, but it's clearly not the same color. Am I missing something?
#Matt Ball is right - you can use NSSegmentedControls, even for single one-time click buttons. Just set the number of segments to 1, and set the mode to "Select None".

Update: there are a few standard button icons which are meant for toolbars. The NSImage Class Reference has a list.
In the above screenshot, only two of the buttons are using built-in images: NSLeftFacingTriangleTemplate, and NSRightFacingTriangleTemplate. The others I drew myself.

XCode 4 (but also iTunes and other Mac apps) provide side or bottom bars that can be shown or hidden with a smooth animation as the user presses a button.

You can use NSSplitView to do that. You can have more than 2 subviews in a split view (left|center|right) and you can build a kind of hierarchy for the different bars (center consists of top and lower split views).
The show/hide effect is not built in, though. But you should be able to use the animator to do that. Most certainly you can also define animations for hiding a view.
You could also use the BWSplitView of http://brandonwalkin.com/bwtoolkit/ where the show/hide animation is already included.
You could also consider subclassing NSViewAnimation, which I believe Xcode uses in a number of places to achieve its fancy animation effects.
