While configuring the JDBC driver to extract metadata from Snowflake like tables, columns, views - what attributes I should make use of to extract table descriptions, column descriptions, tags associated to tables etc.
Also, is there a place wherein I can see the exhaustive list of metadata attributes.
When I configured the snowflake JDBC driver in Collibra data catalog, it fetches only table names but not descriptions, column names but not descriptions.
To get an exhaustive list, use the INFORMATION_SCHEMA. Each database has an INFORMATION_SCHEMA schema within it with a bunch of useful information. You can also use the SNOWFLAKE database which holds similar information across the account.
These two options will probably give you more information than you can get from the JDBC api.

We recently started the process of continuous migration (initial load + CDC) from an Oracle database on RDS to S3 using AWS DMS. The DB is using LogMiner.
the problem that we have detected is that the CDC records of type Update only contain the data that was updated, leaving the rest of the fields empty, so the possibility of simply taking as valid the record with the maximum timestamp value is lost.
Does anyone know if this can be changed or in what part of the DMS or RDS configuration to touch so that the update contains the information of all the fields of the record?

Supplemental Logging at table level may increase what is logged, but that will also increase total volume of log data written for a given workload.
Many Log Based Data Replication products from various vendors require additional supplemental logging at the table level to ensure the full row data for updates with before and after change data is written to the database logs.

Pulling data through LogMiner may be possible, but you will need to evaluate if it will scale with the data volumes you need.
DMS-FULL/CDC also supports Binary Reader better option to LogMiner. In order to capture updates WITH all the columns use "ADD SUPPLEMENTAL LOG DATA (ALL) COLUMNS" on Oracle side.
This will push all the columns in a update record to endpoint from Oracle RAC/non-RAC dbs. Also, a pointer for CDC is use TRANSACT_ID in DMS side to generate a unique sequence for each record. Redo will be little more but, it is what it is; you can keep an eye on it and DROP the supplemental logging if require at the table level.

Some database engines - PostgreSQL being a major example - have JSON-friendly data types (that MySQL currently lacks - it'll just store as a TEXT data type there). This can be handy for working with data (like the options example you cite) that might contain a large amount of schema-less or loosely-structured data.

Instead of having 100+ columns for a bunch of on/off options for a model, you could store them in a JSON object in the database.
Sometimes it is useful, even with MySQL to store data as JSON.

I have two separate database in two separate servers. Both these database have same table . I just wanted to compare similar tables wrt to the data contained.

I want to store some user data in memory, like some in-memory noSQL database.
But later on I want to query that data with a dynamic query constructed from the user. That query is stored in a classic DB like a string, so when I need to query the data stored in memory I would like to parse that string and construct the desired query (by some known rules).
I looked at Redis and I figured out it isn't maintained for Windows anymore, I have also looked at RavenDB but it's main query language is LINQ, even though it can be created dynamic Lucene Query.
Can you suggest me another in memory DB that work with ASP.NET and can be queried with a dynamically created query? Maybe I haven't seen all the options.
I prefer name-value or JSON based noSQL so it's schema can be easyly modified without the constraints of the relation type of DBs
I would suggest to simply use sqlite. It can be easily used as an in-memory database (just open the database using ":memory:" instead of a file name).
You can use a simple 2 columns table with a primary key to emulate a key/value store.
